A group of different Spanish researchers from CIBER (Biomedical Research Center), the University of Zaragoza and CIEMAT (Energy, Environmental & Technological Research Centre) developed a study with a new spreadable product that has a 75% Extra Virgin Olive Oil as a substitute of some animal fats as butter or margarine.

This new product was only produced with vegetable ingredients suitable for vegans too, and it could be used from now on in those dishes that need the most solid fats.

The results of this research, which were already published in the Journal of Physiology and Biochemistry, show a significant reduction of vascular injury for those mice which suffer from arteriosclerosis before and they were fed during the research with some spreadable olive oil instead of butter.

The spreadable olive oil has more than 71% of unsaturated fatty acids (including 62% of oleic acid) versus 27 % of unsaturated fatty acids and 73% of saturated fatty acids that butter has, that’s the reason behind these good results.

Besides, the spreadable Olive Oil has some other bioactive compounds as Squalene or Hydroxytyrosol, as Extra Virgin Olive Oil has too, so it helps to reduce cellular oxidation and the risk of vascular injury.
